OBJECTIVES AND CONTENTS |
Objectives of the Course Unit: |
The aim of this course is to provide the students with the basic knowledge of how the three-dimensional structure of molecules are arranged in space plane and how they affect the taste, odor and toxic properties of foods. |
Contents of the Course Unit: |
The content of this course is the changes in stereo chemistry, carbon atom and spatial order. |

Apply the basic concepts of stereo chemistry. |
Classify the role of different spatial sequence of molecules on taste, odor and toxic effect. |
Discuss different tastes and scents related to eating and drinking according to different geographical regions with Turkish and World cuisine. |
Use stereochemistry knowledge for food quality control purposes. |
