OBJECTIVES AND CONTENTS

Objectives of the Course Unit: Providing students with theoretical and practical knowledge about the production technology of fermented foods
Contents of the Course Unit: The course includes topics such as the definition of fermentation, relevant microorganisms, types of fermentation, traditional fermented foods, and alcoholic beverages.

Defines fermentation.
Recognizes fermentation microorganisms.
Performs the control of fermentation processes.
Knows various vinegar production technologies.
Distinguishes the production technologies of alcoholic beverages.
Knows the production technologies of traditional fermented products such as pickles, olives, kefir, and boza.
