OBJECTIVES AND CONTENTS

Objectives of the Course Unit: The aim of this course is to enable students to learn about the chemical structure of edible oils, their production technologies, refining processes, and their importance in nutrition.
Contents of the Course Unit: This course covers the chemical composition of vegetable oils, fatty acids, oil sources, oilseed storage, oil degradation reactions, extraction methods, refining technology, olive oil production, hydrogenation, and margarine production processes.
